Ingredients:
Potatoes 1/2 kg diced in large cubes
Tomatoes 1/2 kg diced
Green Chilli 4 finely chopped
Coriander powder 1 teaspoon
Cooking Oil 1/2 cup
Salt as per taste
Red chilli powder 1/2 teaspoon
Kalonji ( Onion seeds) 1 teaspoon
Haldi ( Turmeric) powder 1/4 teaspoon
Ginger strips for garnishing
Amchur Powder 1/4 teaspoon
Method of preparation:-
1. Heat up oil in a pan.
2. Add green chillies and fry .
3.Add kalonji seeds and fry for another 1 minute.
4. Add diced tomatoes.
5. Add red chilli powder and mix well.
6. Add Haldi powder and mix well.
7. Add salt and mix well.
8. Keep stirring for 2-3 minutes.
9. Now add potatoes and mix well and let it cook for 6-8 minutes while stirring occasionally.
10. Cover the pan with a lid and turn the heat to very very low.
11. Let it cook for 40-45 minutes (Remember the heat is very very low)
12. Keep stirring occasionally and check when the potatoes are tender.
13. If you feel that it is necessary to add the water then add a bit of water. (Normally there should not be a need for water)
14. When the potatoes have been cooked uncover the pan.
15. Add the amchur powder. Add the chopped coriander for garnishing and remove from heat. Garnish with ginger strips.
Serve it with Naan, Rice or Roti
